Dr. Melina's Mini-Pumpkin, Banana, Chocolate Chip Muffins
You may not know this about me, but I LOVE baking, especially muffins. I made up this healthy recipe that is perfect for a healthy Halloween treat (and makes a great breakfast year round if you make larger size muffins and eat with a cup of Greek yogurt or a mini-smoothie for protein) - recipe below.
Ingredients:
1 3/4 cups whole wheat white flour
1/4 cup sugar
3/4 cup fat free milk
1 egg (beaten)
2 medium ripe bananas
2 tbsp canola oil
3/4 cup canned pumpkin (no sugar added)
1/2 cup mini choc chips
2 tsp. pumpkin pie spice
Preheat oven to 400 degrees
Combine dry ingredients. Set aside. Combine moist ingredients and add to dry. Place in 2 mini muffin trays (sprayed with non-stick cooking spray), top each mini muffin with one regular size chocolate chip, and bake for 10 minutes.
1 muffin = 100 calories, 3 g fat (1 g sat), 2 g fiber, 4 g sugar, 2 g protein. (you can also make 12 regular size muffins instead for a healthy breakfast or snack option)
